Baking cakes has become like therapy for me, after a long stressful day, nothing is satisfying for me like the sound of mixing ingredients, the sound of whisking, turning a few ingredients into magic, and transforming this magic into everyone who takes a bite from my cake
one thing that inspired me to blog about all these cake recipes, is my desire to share this magic with all of you, my dear readers.

Invite your kids, husband, or even friends into the kitchen and let them lick the spoon, help you in measuring the ingredients, and help you with baking, especially if you have kids! trust me this will give them more confidence and patience, and remember it’s not just about cake but about creating memories together, cause every time your daughter bakes this cake in the future, she will remember her beautiful mum in the kitchen making cakes for her! and those memories are the sweetest of all.
Okay! I’m starting to feel emotional, so let’s wipe away those tears and get to that recipe!
INGREDIENTS:
- 1 cup vegetable oil
- 2 cups sugar
- 3 eggs
- 3 cups flour
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1 cup chopped pecans
- 3 cups peeled and chopped apples
INSTRUCTIONS:
Preheat your oven to 350°F. Grease a 9 x 13-inch pan. In a large bowl, combine the vegetable oil, sugar, and eggs. Gradually stir in the flour and baking soda until well mixed. Add the vanilla extract, chopped pecans, and apples, stirring until evenly distributed. Pour the batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 2 hours before preparing the frosting.
FROSTING :
INGREDIENTS:
- 1/2 cup butter
- 1 cup packed brown sugar
- 1/4 cup evaporated milk
- 1/2 teaspoon vanilla
INSTRUCTIONS:
In a small saucepan, combine all frosting ingredients and bring to a boil. Continue boiling for 2 minutes.
Place the saucepan in a bowl of ice water and beat the icing until it reaches spreading consistency.
Once the cake is completely cool, spread the frosting evenly over the top.
